Advice from Anaïs Sauvier - Natur House Dietician in the Annecy region.

SUGAR WHAT TO CHOOSE?

What is the difference between white sugar, brown sugar, brown sugar and whole sugar? Which one should you choose?
But what is sugar? We tell you everything!

WHITE SUGAR:

White sugar comes from sugar cane, sugar beet or sugar palm. It is composed of 99% sucrose, a molecule that contains glucose and fructose. Its glycemic index is quite high (GI 70). However, white sugar has no nutritional benefits. This is due to its refining, which has stripped it of the minerals and vitamins contained in molasses. It therefore only provides calories. However, it is used to benefit from its strong sweetening power. It is still necessary to limit its consumption, because white sugar promotes cavities, diabetes and weight gain.

BROWN SUGAR:

Brown sugar, being slightly less refined than white sugar, contains more nutrients. However, this quantity remains tiny, and can be negligible for our body. The main difference between brown sugar and white sugar is therefore in the taste. Brown sugar has a flavor reminiscent of caramel (beet brown sugar) or cinnamon (cane brown sugar).

WHOLE SUGAR  :

Whole sugar, or integral sugar, is neither crystallized nor refined. It is essentially made up of sucrose, with nearly 95%. Unlike white and brown sugars, it provides nutrients: vitamins, minerals and amino acids. The only downside is that it is less sweetening. Whole sugar can be found in specialty stores and organic shops under the names Mascobado and Rapadura.
