Red cabbage quiche – apples & goat cheese, 97 kcal per portion
Ingredients :
Shortcrust pastry:

300 g T80 wheat flour

140 ml lukewarm water

30 ml olive oil

salt

550 g chopped red cabbage

370 g mascarpone
-
270 g apple
-
100 g fresh goat cheese
-
20 g walnuts
-
salt
-
ginger
-
nutmeg
-
cardamom
-
Shortcrust pastry
Instructions :

Mix the flour, salt, oil and water. Mix and knead the dough until it is smooth.

Then roll out the dough to a thickness of 3mm and prick the bottom with a fork. The filling

Cut the cabbage and chop it in a food processor. Brown it in a large pan with olive oil for 10-15 minutes. Then add the mascarpone. Season with salt, nutmeg, cardamom and ginger generously.

Pour red cabbage into the center of the shortcrust pastry. On top, place apple quarters and walnut pieces. Fold the pastry over and bake the tart for 30 minutes at 180°C.

At the end of cooking, pour in the pieces of goat cheese and enjoy.
Tips:
- It is possible to replace:
-
fresh goat cheese with roquefort
- apple by pear
- nuts with almonds or hazelnuts
