healthy recipe: Vegan Cranberry Scones

Vegan Cranberry Scones, 89 kcal per cake
Ingredients: 4 people
- 215 g T80 wheat flour

105 ml almond milk

70 g oat flakes

65 ml olive oil or hazelnut oil

65 g cranberries

50 g whole sugar

3 g baking powder
Instructions :

In a bowl, pour the flour with the whole sugar and the previously mixed oat flakes. Then add the olive oil and the baking powder and mix.

At this point pour in the almond milk, mix the dough and knead until you obtain a homogeneous mixture.

Add the cranberries at this point only and mix by hand to make sure they are well incorporated.

Make a ball of dough and roll it out with a rolling pin to a thickness of about 2cm and make a round of dough with separate portions. Be careful to arrange your portions of scone with space between each one because they will swell during cooking.

Bake the scones in the oven at 200°C for 20-25 minutes depending on your oven, leave them to cool and enjoy immediately.
Trick :
- Almond milk can be replaced with another plant-based or animal-based milk of your choice. Cranberries can be replaced with chocolate chips or nut flakes.
- Olive oil can be replaced with hazelnut oil, nut butter or unsweetened applesauce.
