Healthy recipe: spring rolls
INGREDIENTS FOR 4 PEOPLE
Sauce accompanied by:
Soak the rice paper sheets one by one in very hot water until they are soft (about 1 minute).
Take them out and place them on a board.
Pour boiling water over the vermicelli, cover, let swell until soft (5 minutes), then drain.
Cut the carrots and radishes into small sticks, wash the bean sprouts.
Clean the mint leaves and chop the onion.
Place two shrimps, a few mint leaves turned over, a few soy vermicelli, 3 carrot sticks and radishes, a few soy sprouts and a little onion in the middle of a rice pancake.
Roll tightly, tucking in the edges as you go.
For the sauce, chop the mango in the plain yogurt, and add salt and pepper.
Serve it all fresh, same day.
