Harira soup

INGREDIENTS FOR 6 PEOPLE  

150g of chicken breast
5 carrots
2 zucchinis
1 onion
1 tomato
1 handful of parsley
1 handful of fresh coriander
1 cube of diet bouillon
1 can of peeled tomatoes (140 g)
1 tablespoon of Ras el Hanout (spice mix found in supermarkets)
1 dose of saffron
1 handful of canned chickpeas
Pepper
Salt
Water

 

Cut the meat into cubes. In a casserole dish, brown the meat for a few minutes with a little oil.

Peel and chop the vegetables roughly, then add them to the meat; cover with water. Add the cube, the can of concentrate, the raz-el- hanout , the coloring, salt and pepper.

Close the pressure cooker and cook for 30 minutes after the whistle starts.

Remove the vegetables and blend them, then return them to the remaining broth; mix well. If it is too thick, add more water.
